Your private experience at San Fabiano Calcinaia begins in the hills of Chianti Classico, at an estate that combines organic viticulture with medieval architecture. The estate's hospitality team will greet you and introduce the history of the property before guiding you on a tour of the winery.
You will see how the estate's organic wines are made, from the vineyard to the bottle, concluding the tour in the barrel cellar where the wines mature. The visit continues with a guided tasting of three of the estate's top organic red wines: a Chianti Classico, a Chianti Classico Gran Selezione, and the Cerviolo Rosso IGT, a Supertuscan blend of 50% Cabernet Sauvignon, 25% Petit Verdot, and 25% Merlot.
The tasting takes place in the barrel cellar or a dedicated tasting room, accompanied by a light lunch. You will be served bruschetta with the estate’s extra virgin olive oil, tomato bruschetta, traditional crostini, vegetable flans, and a selection of local cured meats like Prosciutto Toscano, Tuscan capocollo, and salami. The pairing is completed by Tuscan cheeses, including Pecorino of different aging periods. Fruit juices and other non-alcoholic drinks are offered for children and non-drinkers instead of wine.
