Terroir & Cuisine: Wine Tasting and 7-Course Food Pairing at Cantina Bussoletti

Your experience at the Bussoletti winery begins with a welcome from Martina, an enologist and your host for the day. She will lead you on a tour of the production areas, explaining the process from harvest to bottling and sharing the traditions behind their Umbrian wines.

Following the tour, you will settle into the estate's tasting room for a guided tasting. Here, you'll explore the deep connection between the region's terroir and its cuisine through a selection of seven wines, each paired with a dedicated local dish. The tasting progresses from a Thyrus Extra Brut Metodo Classico with liver pâté prepared by the estate's chef, to a ColleOzio Grechetto Umbria IGT with cured ham from free-range San Venanzo pigs and traditional torta al testo. You will then try the ColleMurello Trebbiano Spoletino Umbria IGT with a giardiniera of local vegetables.

The tasting continues with a focus on the native Ciliegiolo grape, presented in three distinct expressions: Asla Ciliegiolo Narni IGT with salted sheep's milk ricotta and honey; Brecciaro Ciliegiolo Narni IGT with a salad of Castelluccio di Norcia lentils and crispy guanciale; and Ràmici Ciliegiolo Narni IGT with Umbrian wild boar sausage and traditional unsalted bread. The experience concludes with a Passito paired with homemade tozzetti biscuits.

A dedicated menu is also available for children, featuring pasta with tomato sauce, a breaded cutlet with potatoes, and ice cream.
