The Wine Tasting Atelier: Discovering the Classics in Bologna
Here is what's in store for you
Your tasting workshop takes place in an ancient tavern in Bologna’s historic Jewish Ghetto, where you will be welcomed by Giancarlo, a Bolognese oenologist.
Viticulture in Emilia-Romagna has very ancient origins, but an encounter with a people from across the sea changed the course of its wine history forever. Through stories, local legends, and modern genetic research, Giancarlo will explain how the region’s native grape varieties developed and how they express themselves across different terroirs and winemaking methods.
He will also introduce you to the basics of sensory analysis, helping you recognise and describe the aromas, flavours, and other characteristics of each wine.
You will taste three flagship wines from Emilia-Romagna:
- Lambrusco, the region’s lively sparkling wine
- Albana, a white wine made from a native grape variety known for its freshness and structure
- Rimini DOC Bianco, a local white wine from the Rimini area.
The wines are accompanied by a platter of regional specialties, including Mortadella and Prosciutto di Parma.
Conclude your experience with a game: a fourth mystery wine will be served blind. If you identify the grape variety correctly, you will win a dinner offered by InCantina!

At the end of the tasting, you will have the opportunity to purchase any of the wines you enjoyed.
