In just a few years, with the passion of old vintners Cosimo Taurino has been able to make a range of quality red, rosé and white wines from Salento well-known and appreciated all over the world. This also includes the production of Salice Salentino DOC wine. Cosimo Taurino Farm produce the red wine Salice Salentino Riserva Cosimo Taurino®, as well as other local wines that appeal to the area of origin: I Sierri (white), Scaloti (rosé), A64 Cosimo Taurino® (red), 7° Ceppo (red), Le Ricordanze® (passito), and the multi awarded red wines Notarpanaro® and Patriglione®. Today, the historical worldwide known family business is run with hard work and commitment by Cosimo’s wife, Rita, their daughter Rosanna and her husband Fernando Antonio. Together with a team of skilled employees, they personally manage and take care of all the company’s business sectors, such as the vineyards, the winery, domestic and international marketing and public relations. The family has recently expanded the firm and built a brand new modern winery and a new showroom where the greatest wine from Salento is kept. They’ve also blended tradition and innovation by vitrifying the old fermentation containers and the concrete tanks. Cooling plates have been put in them in order to control both the fermentation and the ageing wine temperature. Of particular interest are the cutting-edge rooms where the wine ageing barrels are kept and thanks to a temperature control waterfall system, the right temperature is mantained throughout.

In Salento Peninsula the vine prosperous for more than 4,000 years, thanks to the devotion, fidelity and intelligence of the winemaker. Without the miracle of this continuity, prompted by the consideration that man has always had for the wine as a noble drink and as a gift of the gods, without perseverance and love for the land, many districts would remain the desert lands or covered by woods as they were in past millennia. The Taurino are always been winemakers and the heart of their farm is the Estate Notarpanaro, which in the last century was identified as Notare Panaro, owned by a notary by last name Panaro. The estate, which was acquired in 1956, has required a long and arduous rehabilitation for extreme characteristics of the rocky terrain. The clearing of these lands, the planting of vineyards, the loving care to the vine, painstaking selection of grapes and careful control of the winemaking process, are the continued commitment of the Taurino family which provide continuity with the past respects and preserves schemes and processing techniques according to the teachings of Cosimo Taurino.
