Tenuta Corallo is a modern winery nestled near the stunning “Baia dei Turchi” (Bay of Turks) along the Adriatic coast, where the Alimini Lakes meet Otranto. Established by Enzo and Gabriella Marti in 2010, the estate spans nearly 13 hectares and represents a seamless blend of their love for the sea and passion for winemaking. The brand-new cellar is thoughtfully designed across two levels: the ground floor houses a small showroom, laboratory, and a spacious 180-square-meter area with stainless steel refrigerated tanks for refining wines. Outside, on the terrace, a large rotary tank is dedicated to the fermentation of red wines. The basement level is home to a 100-square-meter barrel room, where wines are aged in wood, with the environment meticulously controlled for temperature and humidity. Visitors are welcome to explore this state-of-the-art facility by appointment, where they can enjoy guided tastings of Tenuta Corallo’s exquisite wines while soaking in the natural beauty of the Salento region.

Polvanera was born from a long family tradition that has always had roots in viticulture. The cellar is rooted in the territory and is immersed in a unique landscape, with vineyards, dry stone walls, and oak stalks. The typical area varieties in the rows are home, from Marchione to Muscat, from Aglianico to Primitivo, passing through the Minutolo, Falanghina, Aleatico, and Bianco d'Alessano. The geographical location, organic agriculture, and cellar were excavated for 8 meters in the limestone rock, allowing the wines to refine at a constant temperature, making the typical Primivo of the area and the other varieties of wine extraordinary. Castel di Salve is proudly one of the historical wine producers in Puglia, having been founded in 1885 by Antonio Winspeare, Duke of Salve, to produce fine table wines and aged bottled wines from the grapes farmed in the estates of Salve, Supersano and Depressa. At its founding, the winery was the first to age and bottle its wines in Salento, under the guidance of Bordeaux winemaker Simon Murat. Its wines commended awards in competitions and expos in London (1888), Chicago (1894), Asti (1898), Paris and Naples (1900). To this day, Castel di Salve has been working on the same land striving to express it into wines of character and elegance. The estate follows all of the production processes in the winery built by their ancestors in 1879: from the destemming of the grapes, the different fermentations, the refining and aging in oak barrels in the underground cellars excavated from limestone. During the last 3 decades, we have modernized the building with respect for the past architecture, to fully control the hygiene of the environment where our wines evolve. To Castel di Salve, cleanliness and controlled temperatures are key to obtaining stable wines without invasive methods. Stainless steel and concrete tanks are temperature-controlled through a system powered by solar panels covering around 92% of our winery’s energy consumption for over 10 years.
