About Winery and Wines
Polvanera was born from a long family tradition that has always had roots in viticulture. The cellar is rooted in the territory and is immersed in a unique landscape, with vineyards, dry stone walls, and oak stalks. The typical area varieties in the rows are home, from Marchione to Muscat, from Aglianico to Primitivo, passing through the Minutolo, Falanghina, Aleatico, and Bianco d'Alessano. The geographical location, organic agriculture, and cellar were excavated for 8 meters in the limestone rock, allowing the wines to refine at a constant temperature, making the typical Primivo of the area and the other varieties of wine extraordinary. Unique and extraordinary bottles come to life that represent a fixed point in the Apulian wine tradition.
A long family tradition characterizes the history of Polvanera, founded in 2002 by the determination of its owner and oenologist Filippo Cassano. He has always been aware of the potential of his land and its typical grapes. Thanks to his father's knowledge of viticulture and his training at the "Basile Caramia" agricultural school in Locorotondo, Filippo decided to focus on pure vinification, a process that enhances the characteristics of the vines and the terroir. Located between Acquaviva delle Fonti and Gioia del Colle, Polvanera is surrounded by a unique landscape of dry stone walls, downy oaks, and vineyards. The cellar itself is unusual: dug into 8 meters of limestone rock, this charming structure allows the wines to be aged at a constant temperature. The adjoining building is an 1820 manor where tourists and guests are welcome to taste the wines. Polvanera is located in a famous tourist area of Puglia, 30 minutes far from the Itria Valley and Matera. The grape harvest takes place during the first ten days of September. The latest equipment for pressing and vinification contributes to the BIO selection offered by Polvanera. Filippo Cassano, thanks to his worthy collaborators and the fundamental support of his family, continues his ambitious project of promoting and improving the quality of Primitivo and other autochthonous vines.
