Château Pillebois
About the Winery
Situated in the prestigious AOC Castillon, near the renowned St Emilion region of Bordeaux, our estate is a newly revitalized gem. Having recently acquired the property, I have dedicated the past few years to learning the craft of winemaking while modernizing the winery and making the estate livable. The vineyard spans 11 hectares, with all vines surrounding the estate. We focus exclusively on red wines, as dictated by the AOC Castillon label, growing two iconic Bordeaux varieties: Merlot and Cabernet Sauvignon.
Visitors are always welcome at the estate, where I enjoy sharing my passion for winemaking and the knowledge I’ve gained through this transformative journey. The personal touch and attention to detail are at the heart of everything we do here, offering guests a glimpse into the authentic experience of Bordeaux winemaking.
About the Wines
Our vineyard is planted exclusively with Merlot and Cabernet Sauvignon, and while we grow just two grape varieties, we produce three distinctive styles of wine. The secret lies in how we age our wines, with each method bringing out different characteristics. We use concrete tanks, barrels (not new), and amphoras, one of which was crafted in Tuscany, renowned for its expert craftsmanship.
These aging techniques allow us to create three unique expressions of our wines, offering a variety of flavors and textures that reflect both the rich terroir of Castillon and our innovative approach to winemaking. Each bottle captures the essence of Bordeaux, blending tradition with modernity.

Château de Pillebois
The passion that drives them can be felt in the commentary during the tours.
It can also be felt in the quality of the wines produced. Terroir, authenticity, and quality: here is a winning trifecta for sure!
There is one wine that I particularly enjoyed: the "mano à mano", aged in an amphora.
Fruity, it will delight the ladies as well as the gentlemen. To be drunk with moderation and great pleasure.
Side by side
We were welcomed by Filippo in his "chateau", which has little of a castle, but the passion he conveyed makes up for, and even surpasses, this lack.
He explained all the phases of production to us, he had us taste the two promised wines.
Beyond the visit itself, I think it's really pleasant to get to know Filippo, because he is an interesting person, who reinvented himself from scratch and for this reason alone is to be highly esteemed.
I highly recommend this tasting.
