Domaine Grand Guilhem is a family-run, artisanal winery that covers 8.8 hectares, nestled in the scenic "Vallée du Paradis" in southern France. The estate has been certified organic since 2004 and has been producing natural wines since 2011, adhering to strict "méthode nature" principles. These principles ensure that the wines are crafted with care and respect for the environment, using manual harvesting, fermentation with natural yeasts, and without the addition of sulfites or any other inputs, resulting in pure and authentic wines that truly reflect their terroir.
The estate not only excels in winemaking but also offers a unique and charming accommodation experience. Guests can stay in a beautifully restored 19th-century manor house, complete with tastefully appointed guest rooms and self-catering cottages. The picturesque setting, perched above the small wine-producing village of Cascastel, offers an idyllic retreat for wine lovers and travelers alike. Cascastel is a village of just 200 inhabitants, providing a tranquil and authentic rural experience.

The nearest town offering all essential amenities, Durban-Corbières, is just 6 km away along the D611. Domaine Grand Guilhem produces a diverse range of wines, including 1 white, 1 orange, 1 rosé, 4 reds, and 1 sweet wine (Rivesaltes). Each wine is a blend of various Mediterranean grape varieties, such as Carignan, Grenache, Syrah, Mourvèdre, and Macabeo. Fermentation is carried out in barrels and jars, allowing for the integral development of the wines' character.
The vineyard is set on ancient schist soils that are well-drained, airy, and sparse, contributing to the intimate landscape of small plots. The estate follows traditional goblet pruning, which is ideal for the Mediterranean climate, offering shade from the foliage, lower yields, and shorter sap flows, ensuring better grape nourishment. Pruned vines are mulched to return nutrients to the soil, adding humus.
Domaine Grand Guilhem practices soil cultivation using light tractors to avoid compacting the earth, ensuring the synchronization of alcohol and phenolic maturity in the grapes. This avoids the need for late harvesting, resulting in more refined wines with higher acidity and better balance. For over 11 years, Domaine Grand Guilhem has refrained from using chemical fertilizers, promoting a living soil and yielding more balanced grapes. The vineyard adheres to strict organic farming practices, certified by ECOCERT, and prohibits synthetic chemicals, using only sulfur and copper for treatments.
The grape varieties reflect the Mediterranean heritage, with low-yield Carignan contributing dark fruit, leather aromas, minerality, and structure. Grenache brings softness, roundness, and velvety texture, while Syrah adds elegance and length, balancing the power of Carignan and the finesse of Grenache.
