Mainova: a wine fresco

it was a nice experience, finding the place protected by camera and steel doors ... leading to a warming and personalized welcome by Pedro as we were, with my wife the only visitors, therefore it was a private appointment in the wine estate under an August burning sun! giant fresco and fine pieces of decoration in the cellar show the refine taste of the 'mas nova' daughter who is the creator of this 'terroir'

It’s a great tour! Very family friendly and you get to learn a lot about the winery’s history and its sourroundings. The wine and the olive oils are super tasty! Especially the tasting at the end of the tour, made it special

Herdade da Fonte Santa spans 20 hectares of vineyards planted with traditional Portuguese grape varieties, with 17.5 hectares managed under integrated production and 2.5 hectares following organic practices. The harvest is carried out manually and at night, ensuring meticulous care for the grapes and allowing for precise selection. Grapes are transported directly to the cellar, where gravity-fed processes preserve their quality during pressing and reservoir filling.

Winemaking here is a harmonious blend of tradition and modern expertise. Processes such as spontaneous fermentation, minimal human intervention, low sulphur dioxide use, and respect for the vineyard's natural pace are combined with contemporary knowledge to produce exceptional wines.

Sustainability extends beyond the vineyard. Most bottles are crafted from 100% recycled glass, while labels and shipping materials are made from recycled or high-cotton content paper. Wax seals replace traditional capsules, offering durability with a lower environmental footprint. DIAM stoppers are chosen to ensure the wine’s proper evolution over time, preserving its aromatic profile and quality.
