Food and Wine Pairing Tasting at Casanuova di Ama in Gaiole in Chianti

You will be welcomed personally by the owners of Casanuova di Ama for a food and wine experience in the estate's tasting room. While a guided tour of the winery is not included, you are welcome to explore the surrounding vineyards on your own before or after the tasting.

Your host will guide you through a tasting that pairs the estate's wines with traditional Tuscan dishes. The tasting includes seven wines (a sparkling, a white and reds): a Spumante Metodo Classico, IGT Toscana Bianco "Mattutino", IGT Toscana Rosso "Com'era", IGT Toscana Rosso Selezione "La Fonte", Chianti Classico, and Chianti Classico Riserva.

The food pairing begins with bruschetta topped with the estate's extra virgin olive oil and cherry tomatoes, alongside olives and a selection of croutons. This is followed by a platter of local cured meats, such as salame, prosciutto, and capocollo or finocchiona, and aged pecorino cheeses served with jams and honey. The meal continues with a seasonal first course, which could be panzanella, farro salad, or fresh pasta in warmer months, or a classic pappa al pomodoro or ribollita in winter.

To conclude, you will taste a Vinsanto del Chianti Classico paired with cantucci biscuits and a homemade dessert. The experience finishes with a tasting of Chianti Classico Grappa.
