A journey through all the stages of production of Balsamic Vinegar, from the estate's hillside vineyards to the finished bottle, passing through the The tour is completed by a tasting of the vinegar in the wine cellar.
The tour is completed with a guided tasting of 5 types of traditional Balsamic Vinegar of Modena. Classic, historical, aged, never banal.
Transfer to the farmhouse with a walk through the estate vineyards.
Tasting menu of the territory:
-Shaves of 24-month Parmigiano Reggiano with Traditional Balsamic Vinegar of -Modena DOP
-Seasonal flan with Balsamic pearls
-Tortelloni with fresh ricotta cheese, cheek bacon and Balsamic Vinegar of Modena I.G.P. Aged 8 years
-Gnocco and tigelle with local cured meats and cheeses, jams, Apennine acacia honey, homemade "giardiniera" (vegetable garden)
-Homemade ice cream with "Family Reserve".
-Wines: Pignoletto Colli Bolognesi (white) and Lambrusco Grasparossa di Castelvetro DOP (red)
-Digestive: Grappa of Lambrusco Grasparossa from the farm vineyards
