The experience begins with a welcome at the winery and a visit to the vineyards, often accompanied by producer Gerardo Perillo, where you will learn more about the family story of Cantine Perillo and its deep connection with this land. The visit continues in the cellar, where you will discover the places where Aglianico is transformed, aged, and given time to express its character.
The experience concludes with a guided tasting of 3 wines:
- Irpinia DOC Coda di Volpe, a fresh and elegant white wine made from one of Campania's oldest native grape varieties;
- Irpinia DOC Aglianico, a structured red that showcases the region's flagship grape;
- Volpone, available in either its red or rosé version depending on the season and availability, offering a more approachable expression of the local terroir.
The wines are accompanied by a board of local cheeses, including Bagnolese pecorino and Montella caciocavallo, together with various cured meats such as coppa and local soppressata. The platter may vary depending on availability.
