Volcanic Kaos wine experience at Sassotondo Organic Winery in Maremma

In 2017, we met agronomist Pedro Parra, with whom we collaborated for 2 years investigating the particularities of our soils to identify the nuances of the various terroirs in the different expressions of cherry. The volcanic element immediately jumps out: wines that are generally more savory, sometimes salty. This wine experience was thought to introduce you to this other way of reading wine, in search of the volcano.

After a visit to the underground cellar, we will explain our choices in ecological vineyard management. Next, we will taste together six wines in which the expression of the volcanic soil is evident. We will explain the grapes and the different winemaking and aging techniques. Some of these wines are extremely limited editions.

The wines for tasting will be: Ritorno (Etna Bianco Superiore - Sassotondo - a nonprofit project that binds us through our family to another volcano), Numero Sei (a gentle Orange Wine), Numero Dieci (a firmer Orange Wine, Greek with long maceration), Monte Rosso (black nocchianello, an ancient, indigenous and almost lost vine from Pitigliano), Poggio Pinzo (ciliegiolo with long maceration in terracotta), and Monte Calvo (ciliegiolo to which a part of the grapes that have not been destemmed gives particular finesse).

The wines will be paired with samples of Flamigni's savory pastries, an innovative project to enhance the meaning of a good food pairing, and from the tasting of our organic olive oil from MONOCULTIVAR CANINO olives.
