The name Cantine Re Dauno is inspired by the legendary union between Evippe, daughter of King Dauno, and the Greek hero Diomedes. According to myth, upon arriving in Capitanata, Diomedes founded a new city and named it Castrum Drionis in honor of his wife—a name that evolved into modern-day San Severo, where the winery is proudly based. Situated in the historic center of San Severo, Cantine Re Dauno occupies a striking 1927 building that preserves the charm of the past. Its evocative underground cellars, distinguished by grand cross-vaulted ceilings in clay brick, maintain a constant temperature between 12°C and 18°C—ideal conditions for refining Classic Method Sparkling Wines in an environment that is both atmospheric and steeped in history.

“It is necessary to listen to and then respect the vine from which everything starts. You have to second it for what nature gives it. It is a fantastic plant which must be educated to the ‘good’ but for this reason it needs time, committment and passion.” Harmonious words that reached me stimulating my dreams. There was nothing written in what I heard, as well as for those wise, there weren’t and there have never been established agronomic practices, nor a prepacked wine recipe, but only a great attention to the vine and to the observation of nature. An ancient erudition that I wanted to be mine, trying to absorb that oral traditon which has still value. Therefore, once again, I have made my choice and choosing I have decided to aim at organic farming which was the daughter of what land gives, putting myself as an observer, trying to intervene the bare essentials in the flow of seasons with the aim of giving a unique, spontaneous, true and good wine that is the guarantee of my work.
