Agrivar di Palazzo di Varignana società agricola
About the Winery
Our winery was born from the dream of a man who carries his land in his heart—the land that saw him born, grow, and flourish, and which he caresses every day with respect and passion. Here, wine is not just a product: it is a ritual, a gesture of love that follows the slow breath of the seasons and the embrace of nature.
Those who work in the winery are guardians of a precious heritage, where wine is born of sweat and hope, and grows amid trust and harmony. In this small but great family, every voice is heard and every step is shared. Technology is not cold engineering, but a subtle breath that guides the path where time bends and wine takes shape. And so the past and the future intertwine, in an embrace of light and mystery, to give the world a sip of eternity.
Every year, the earth gives us two precious gems: wine and olive oil, the fruits of patient waiting and skilled hands, guardians of ancient knowledge handed down with care.
When you cross the threshold of our cellar, you don't just taste wines or oils—you enter a story of life, emotions, and deep roots. A piece of our home that becomes part of yours.
The Palazzo di Varignana estate presents its new winery: 1,100 square meters built according to the principles of semi-subterranean architecture, made from natural materials representative of the local area, such as olive wood and red brick, perfectly incorporated into the surrounding landscape.
The tasting room is characterized by stylish design finishes and colors reminiscent of autumn foliage, where the view extends toward the terrace overlooking the spectacular vineyard currently being converted to organic production. As well as the native grape varieties, such as Sangiovese, Albana, Famoso, Malbo Gentile, and Pignoletto, you can find international varieties, such as Pinot Noir, Pinot Blanc, and Chardonnay.
We use state-of-the-art production technologies to guarantee the protection of the authenticity and organoleptic properties of our wines. The cellar, under its imposing red brick vaults, houses the French oak barrels in which the young wines rest and refine to reach the right level of aging and become the best expression of the terroir and the vines that produced them. Among the Spumantes you’ll find bottles of Villa Amagioia on the characteristic pupitre wine racks, traditionally used for the remuage process, the last key step in preparation for the disgorgement typical of the Metodo Classico (Champagne Method).
The winery and vineyards are situated in a wonderful natural amphitheater, an exceptional location that, since last July, has hosted various events related to the world of wine tourism, such as concerts and open-air cinema with tastings.
The tasting room is open from Wednesday to Sunday, offering visitors a unique experience to discover our wines: Chardonnay, Spumante Metodo Classico, Pinot Noir, and Sangiovese Superiore.
About the Wines
The story of the Agrivar di Palazzo di Varignana winery's oenological project took its first steps in 2016 with the planting of some native and other international vines for an initial production of four types of wine, white wine and red wine: Villa Amagioia Blanc de Noirs Metodo Classico Brut, Chardonnay Colli di Imola, Sangiovese Superiore Doc and Pinot Noir.
The contamination of native and international vines generates an extraordinary value to our vines and wines. The population of such diverse vines dedicated in distinct plots generates our Valley of Miracles. The microclimatic conditions, the Mediterranean influences offset by a continental terrain, the north-south orientation of the valley and the east-west orientation of the vines are the perfect combination to give sun and warmth to the vineyards and to generate excellent wines.
The mission of Agrivar di Palazzo di Varignana is to produce quality Italian wines that convey the strength, identity and characteristics of the Italian terroir. In the Varignana area, there are indigenous genetics, very solid and with a historical depth dating back to the ancient Romans and beyond. The estate and the winery where the wines come from are located on the very special Varignana hills, just a few kilometres from Bologna, delivering characteristic aromas, flavours and nuances. The commitment of our vines is able to overcome any external factors such as the particular soil on which they grow. The soil of the Varignana hills is a lean soil made up of clayey rocks that are not very hospitable and thin calcareous sands to support fertility. However, these territorial characteristics make it possible to obtain a high biodiversity of wines and thus a unique value compared to other wines. Good things happen when you put your mind to it, and our vineyard works hard every day to produce an unparalleled wine. For production, we make use of the most modern technology to ensure that the authenticity and organoleptic properties of the wines are preserved. The barrique cellar, under its imposing red brick vaults, houses the French oak barrels in which the young wines rest and age to reach the right degree of maturity and become the best expression of the terroir and the vines that generated it.
All these particularities: a reasoned and non-fractionated supply chain, multi-ethnicity, the uniqueness of the soils and state-of-the-art technology represent the distinctive requirements that make the Agrivar winery and the work of the people who transform the product excellent, because making wine is a cultural approach.
Agrivar di Palazzo di Varignana is preparing to define its own approach to the world of wine with a corollary of events around its cellar, designed to nurture and disseminate the relationship between wine and the natural context in which it is produced. A rich programme of sensory tastings has been constructed to encourage the enjoyment of new wines immersed in the Varignana landscape. The "Cellar Experiences" where tastings are accompanied by a menu of fine local cheeses and sliced meats, designed to enhance the relationship between table and spirit and enjoy the Varignana area in company.

Pleasant tasting in an enchanting place
My only suggestion: accompany the wines with some more breadsticks or similar products.
Elegant and relaxing
A shame not to see the machinery in action, but the harvest is seasonal.
