About Winery and Wines
We are a young company born from the passion of two brothers for agriculture and viticulture. We started in 2003 with the recovery of abandoned terraces in Granaro di Ceramida, a small hamlet of Bagnara Calabra (RC) overlooking the splendid Costa Viola. We have started a project for the production of wines from native vines: Zibibbo and Calabrese Nero in particular. Recently we have experimented with some international varieties: Sirah and Cabernet Sauvignon. In addition to our children, family members, and many childhood friends who have become involved in the project, they too are in love with this land.
The vinification cellar is located in a small room in the old village of Ceramida, where the equipment for vinification has been placed, which is done with traditional and artisanal techniques.
We do not use barrels or barriques for aging, but everything is done in steel vats.
1) name: Nero D'Aspromonte, grapes: Calabrese Nero 100%, Costa Viola IGP.
production area: ancient terraces of the Viola coast at about 400 mt amsl located in bagnara calabra - fraction of granaro di ceramida. the clay soil suitable for viticulture with a hot climate characterized by strong day/night thermal excursions and sea breezes coming from the sea which give the grapes intense and unique scents.
pruning: guyot training system with a density of about 7000 vineyards per hectare. production: it is contained by pruning and thinning of the bunches and is intentionally limited to approximately 1.5 kg per stun.
harvest: 3rd week of september - manual harvesting with selection at the time of harvest
vinification: process of long and prolonged maceration with fermentation in steel vas with a controlled temperature between 15° / 17°
aging: steel vas for about 9 months to allow the conservation of the intense original scents. bottled for about 3 months
organoleptic characteristics: a wine with a ruby red color is obtained, dry, rightly acid, full-body.
alcohol content: 13° serving temperature: 18° C
2) name: Sole D'Aspromonta, grapes: Zibibbo 100%, Costa Viola IGP.
