At Pisoni, winemaking is an art inspired by tradition and innovation. The family was among the first in Trentino to recognize the region's potential for producing prestigious sparkling wines using the classical method, known as Trento DOC. This method, based on the “Méthode Champenoise,” allows the winery to create sparkling wines of exceptional quality. Pisoni’s Trento DOC matures deep in a cellar carved out of the rock, where the wine slowly develops its fine perlage at a constant natural temperature of 10-12°C.
In addition to their sparkling wines, Pisoni is renowned for their artisanal grappa. The family has perfected the art of distillation, crafting elegant, balanced distillates that reflect the harmony of the Dolomites and the passage of time.
