CHAI SAINT OLIVE

Chai Saint Olive is Lyon’s first urban winery, located in the heart of the 6th arrondissement. As a wine production facility, we produce local wines using grapes sourced from committed partner winemakers located within 80 km of the winery; these grapes are vinified on-site, from the reception of the must through bottling and on-site sales. Whether aged in oak barrels, stainless steel tanks, or amphorae, with a careful selection of grape varieties and a bespoke approach to each cuvée, our winery combines winemaking expertise, artisanal precision, and deep local roots. Chai Saint Olive is also a unique event venue in Lyon, dedicated to wine tastings, wine-tasting workshops, educational sessions, and private or professional events.

Chai Saint Olive offers a range of wines carefully crafted from five iconic grape varieties: Marsanne, Viognier, Chardonnay, Syrah, and Gamay. This selection allows us to create wines with a modern, expressive, and approachable profile that meet the expectations of both wine enthusiasts and connoisseurs.

Marsanne brings roundness, balance, and delicate notes of yellow fruit and flowers. Viognier captivates with its aromatic intensity and scents of apricot, peach, and white flowers, resulting in generous and elegant wines. Chardonnay rounds out the blend with its freshness, finesse, and subtle aromas of citrus and white-fleshed fruits.

For red wines, Syrah expresses its full richness through notes of dark fruit and spices, along with a beautiful structure on the palate. Gamay, meanwhile, brings freshness, richness, and fruitiness, with aromas of red berries that make the wines particularly pleasant and easy to enjoy.

Thanks to the complementary nature of these five grape varieties, Chai Saint Olive crafts balanced, aromatic, and approachable wines—perfect for pairing with meals, moments of togetherness, and any occasion where the pleasure of wine takes center stage.
