Nestled in the heart of Burgundy’s prestigious wine country, the Domaine de Cromey is more than just a stay among the vines—it’s a deeply rooted experience in wine, land, and legacy. Guests who visit Cromey step into a story that blends history, viticulture, and passion for restoration.

When restoration began in 2014, the manor house stood quiet beneath a hillside once planted with vines. The land above, known locally as “Le Clos”, had long since returned to scrub forest, with springs running freely across its slopes. Yet the presence of ancient vine stakes and the grand wine press inside the manor’s former dining room spoke of a rich winemaking past. Cromey had never been a château in the formal sense, but rather the wine-producing heart of the Château de Dracy’s estate across the valley.

The revival of the Cromey vineyard was a dream born from this heritage, and it took years to navigate the layers of French agricultural regulations. Clearing the forest, preparing the soil, and diverting natural springs were just the beginning. The real challenge was establishing a partnership with the right winemakers—professionals who shared the estate’s organic vision and long-term commitment to quality.

That’s when Domaine AMI, a dynamic, organic wine project led by Willy and Paul in the neighboring village, entered the story. Their enthusiasm for Cromey’s untouched 7-acre parcel—remarkable in both size and elevation for Burgundy—made them the perfect partners. With no history of chemical use and a cooler microclimate increasingly valuable in the era of climate change, Le Clos at Cromey offered the ideal canvas for sustainable winemaking.

Before planting could begin, however, the team had to secure the official “droit de plantation” from FranceAgriMer—the national authority regulating new vineyards. Months of patient waiting paid off, and in 2019, the team finally planted two-thirds Chardonnay and one-third Pinot Noir.

The vineyard’s first small harvest came in 2022, giving birth to Cromey’s inaugural cuvée: Le Clos Bourgogne Blanc Monopole—a symbol of patience, place, and renewal.

Today, Domaine de Cromey invites guests to discover this living story through immersive stays and tastings, surrounded by the very vines that have reconnected the land to its historic roots.

Domaine de Cromey offers more than just wines—it offers a deep connection to Burgundy’s rich winemaking heritage. Guests are invited to taste not only outstanding wines from esteemed producers, but also the very wines personally selected by the estate, followed closely from vineyard to bottle, vintage after vintage.

The estate’s most recent transformation is the restoration of a 16th-century former winemaking facility, once the central production site for the nobility of the Château de Cromey. In the 1500s, this building played a pivotal role in vinifying wines from the surrounding lands—vineyards that spanned thousands of acres.

Today, this noble structure houses the estate’s flagship Tasting Room, where history meets modern hospitality. The original architecture has been carefully preserved, including the presence of a traditional Burgundian wine wheel, a mechanism used for operating monumental wine presses for over four centuries. One such press, dating back to the early 1800s, still stands proudly in the manor’s main dining hall.

After centuries, this space has returned to its roots: welcoming guests once more to taste Burgundy wines in the very setting where noble cuvées were once crafted. The result is a tasting experience that combines elegance, depth, and historical continuity.
