Tenuta l'Apparita is a boutique winery located in the hamlet of Bargino, in the renowned wine region of Chianti Classico, Tuscany. Surrounded by lush vineyards, olive groves, and woods, the estate embodies a deep connection to the land, where passion and tradition merge. The story of l'Apparita is driven by Paolo, a man of many talents and an undying love for wine. His journey from a sommelier to a viticulture and enology graduate, alongside his career as a surgeon, reflects his deep-rooted dedication to winemaking. Paolo’s journey began with a simple passion for tasting wines at dinners with friends, eventually leading to the establishment of the estate's 7,500 Sangiovese vines. His curiosity for wine also led him to study and import fine Champagnes and other Italian delicacies like chocolate.
The estate revives the old tradition of grape harvesting, where family and friends come together to celebrate the land and its fruits, filling the air with joy and creating memories that blend into the winemaking process. Here, modern technology and traditional techniques combine to produce exquisite wines that capture the essence of the Tuscan terroir.
Tenuta l'Apparita produces d’Assolo, a pure expression of Sangiovese, the quintessential Tuscan grape. Situated within the Chianti Classico DOCG region, the estate benefits from the ideal microclimate and diverse soils that allow Sangiovese to thrive. d’Assolo represents a tribute to this ancient grape variety, showcasing its vibrancy and elegance.
The wine undergoes a meticulous process: alcoholic fermentation lasts 7 to 8 days, followed by maceration for about 3 weeks in temperature-controlled steel vats. After 5 to 6 months of maturation in steel vats under nitrogen, which preserves the fruity notes, the wine is aged in a combination of large Austrian oak barrels and barriques for two years. A final 6 months of aging in the bottle further enhances its complexity.
d’Assolo boasts a balanced ruby red color with intense aromas of cherry, blueberry, and black cherry, complemented by fresh herbal notes like thyme and bay leaf. It is a refined and harmonious Sangiovese, perfect for pairing with grilled meats, pasta with meat sauce, game, and even non-raw fish dishes.
