Organic Wine Tasting with Light Lunch at La Dama Vini in Valpolicella

Your experience at La Dama Vini begins in the historic Ca' Besi vineyard, in the heart of Valpolicella. Here, your host, a sommelier or WSET-qualified guide, will introduce you to the area's unique terroir, its native grape varieties, and the estate's organic farming methods.
The tour continues inside the winery with a visit to the wine aging area and the technical facilities, where you will learn about the production process behind the estate's organic wines. After the visit, you'll take a seat in the tasting room for a guided tasting and light lunch.
You will taste five wines that showcase the signature style of Valpolicella:
- Bollicella Rosato Frizzante sui Lieviti (100% Molinara): a dry, pale sparkling rosé refermented on its lees, to start.
- Valpolicella Classico DOC Superiore Biologico (95% Corvina, 5% Rondinella): bright, cherry fruited, lightly structured.
- Valpolicella Ripasso Classico DOC Superiore Biologico (50% Corvina, 25% Rondinella, 20% Corvinone, 5% Molinara), refermented on Amarone skins, fuller and warmer.
- Amarone della Valpolicella Classico DOCG Biologico (73% Corvina, 17% Rondinella, 10% Corvinone), dried-grape, powerful and dry.
- Recioto della Valpolicella Classico DOCG Biologico (85% Corvina, 10% Rondinella, 5% Molinara), the sweet, dried-grape wine that closes the meal.
The tasting is paired with a light lunch of local specialties. You'll start with fresh bread and the estate's homemade Extra Virgin Olive Oil, followed by a selection of premium cured meats, like pink-pepper-aged loin and Coppa aged in Amarone and Monte Veronese cheese served with homemade Millefiori honey.
The meal continues with Sopressa Veneta, rolled Pancetta, traditional giardiniera, and dessert. The experience concludes with coffee and a taste of Grappa made from Amarone pomace.
