Corvina-Focused Wine Tasting with Local Pairings at Paolo Cottini in Fumane
Here is what's in store for you
This tasting follows a single grape, Corvina, to show how it can produce five very different results. A member of the Paolo Cottini hospitality team will welcome you and guide you through the winery in Fumane, from the drying loft where grapes rest to the cellar and barrel room.
You'll then take a seat in the estate's tasting room for the guided tasting. You will start with the ZORE Brut Blanc de Noir, a dry sparkling wine made from black grapes. The tasting continues with a Valpolicella Classico, the fresh, unoaked red of the area, followed by "Elio", a fuller red blend of Corvina and Merlot. You will then taste Castrum, a 100% Corvina wine that honors the medieval castle of Castelrotto, and finish with "Scriba", a gentle sweet red made from dried grapes.
The wines are served with a platter of local products: Sant'Andrea mezzano, a cow's-milk cheese, and a garlic-free salame nostrano from Trentin, a producer in nearby Cerea.
