"Riserva" Escape: One-night wine, dinner & ancestral wine stay at Opera02

Your two-day experience begins at Opera02, a wine.resort set among the vineyards of Levizzano di Castelvetro, the heartland of Lambrusco Grasparossa. After checking in, you can schedule your 75-minute 'Emilia Experience' and your one-hour session in the wellness area.

A member of the hospitality team will lead you on the Emilia Experience, a tour through the Opera02 winery and its traditional 'acetaia'. You will learn about the estate's organic Lambrusco Grasparossa before heading upstairs to see the 'batterie', sets of progressively smaller wooden barrels used to age Traditional Balsamic Vinegar of Modena for a minimum of twelve years. In the tasting room, you will sample two Opera02 wines and three balsamic vinegars of different ages, served with Parmigiano Reggiano DOP and focaccia with Prosciutto Crudo di Modena DOP. The tasting includes Opera02 Lambrusco Secco, a fresh sparkling red, and Malbo Gentile Rosso dell’Emilia IGT, a still red wine.

Dinner is a four-course seasonal menu at the Opera02 restaurant, paired with estate wines. The menu changes with the seasons but features Emilian recipes and ingredients, with dishes like Modenese tortellini in Parmigiano Reggiano cream or summer ravioli with fresh tomato and basil.

The next morning, after a breakfast of sweet and savoury options, you will travel into the Apennine hills to visit TerraQuilia in Guiglia. This small organic winery specializes in wines made with the ancestral method, where refermentation occurs in the bottle without added yeasts. Weather permitting, the visit starts with a walk through the vineyards. guided by a member of staff. You will then tour the winemaking, bottling, and ageing areas to understand the estate's production philosophy. The experience ends with a guided tasting of three unfiltered, organic, and vegan wines, including Terrebiache Col Fondo, a sparkling white from Pignoletto and Trebbiano, and Nativo Ancestrale.
