Chante Cocotte
(Winery in Roussillon)

At the Chante Cocotte estate, located at the foot of the village of Fontcouverte and on the foothills of the Alaric mountain, the plots cover 4 hectares. The century-old Grenache and Macabeu vines benefit from limestone soil (white marl and travertine) while the Merlot, Syrah, and Cabernet Franc flourish on a terroir of colluvium and alluvium at the bottom of the valley, deposited over time. millennia. The Joure stream and the Fontcalel source run through the vineyard and nourish the roots, providing unique organoleptic qualities to the terroir. Throughout the summer, the berries take on colors under the song of the cicadas before expressing their aromatic palette during vinification and aging. All of the Chante Cocotte estate's plots are harvested manually at daybreak to preserve freshness and aromas. The clusters are selected and sorted by hand. The terroir, the first place of a great wine, thus retains all its authenticity. The estate is currently undergoing organic conversion. Their goal is to respect the plant and the soil on which it flourishes, in balance.
