About Winery and Wines
The winery is located at the entrance to the town, for those coming from Nuoro. Built with new techniques, materials and equipment, it is very functional and suitable for processing operations and for receiving guests who wish to taste the wines of the winery. The grapes, harvested by hand at different times, arrive in the cellar in small crates, are sorted for further selection of the bunches, following the selection already carried out in the vineyard, and then conveyed to the crusher-stemmer machine where the grapes are gently separated from the stems and pressed. The crushed grapes are transferred to the 50 hl vinificators, where, following the addition of very small doses of metabisulphite (5 grams per square metre), fermentation by native yeasts begins.
Located at different altitudes in areas of high environmental value and cultivated directly by the members, the vineyards have an average size of just over one hectare. The grape variety grown is Cannonau. The most common training system is the alberello system, accompanied by the spurred cordon with a reduced number of buds per plant. The work carried out tends to preserve the biochemical fertility and water reserves of the soil.
