Step inside a traditional trullo in the countryside near Castellana Grotte, close to Alberobello, and experience the Itria Valley through one of Puglia’s most loved street foods: the fried panzerotto. Upon arrival, you will be welcomed by a local host and introduced to the rural setting before starting the hands-on part of the experience. The dough will already be prepared and risen, allowing you to focus on stretching it, filling it with tomato and mozzarella, sealing it with the traditional technique, and watching it become a golden, freshly fried panzerotto.
While the panzerotto is cooking, enjoy a guided tasting of local products that celebrate the flavors of Puglia and the Itria Valley. The experience includes a tasting of local wine, extra virgin olive oil, traditional baked goods such as focaccia, taralli, and friselle, and a selection of Apulian cheeses such as burrata, primosale, and aged varieties. Food is included as part of the tasting, creating a complete wine and food experience rather than a simple cooking class.
