It was in 1896 that Eugene Billiot, a miller by profession in Ambonnay, invested in the vines when electricity arrived. He thus sees in the purchase of these lands the prosperity of his descendants. Grape productions are then sold to major Champagne brands before being partly kept for the first development of Cuvées in our name. Champagne BILLIOT has existed since 1937, the initial property belonging to Mr. Louis BILLIOT, who then separates it between his descendants, brothers and sisters of Henri Billiot. It was in 1960 that Champagne H. BILLIOT & Fils was born with Henri who invests and creates the cellars at 1 place de la Fontaine, putting access to the trade by placing us in the center of the village, then Mr. Billiot Serge who, to develop the reputation of our wines, will diversify the range and imagine our Special Cuvées. In 1992, we joined the Company with the creation of EARL H. Billiot, then SCEV in 2010, when Serge Billiot retired, it is now Laetitia Billiot, proud to be the 5th generation who is in charge of the management of the exploitation and the production and the elaboration of our wines after 17 years of family work.
Ambonnay, one of the 5 premier grands crus in Champagne, is located in the heart of the Côte des Noirs, on the southern slopes of the Montagne de Reims. Its slopes are renowned for the richness of their Pinots Noirs and Chardonnay. Our operating area is 4ha 70 spread over eighteen plots all located in our village with ideal exposure since facing south, we are lucky to be, on all of our cuvées, Grand Cru but also pure Ambonnay, The grape variety of the vines is around 75% Pinot noir and 25% Chardonnay, All the work on our plots is done in a reasoned manner, always with a concern for quality and respect for ancestral environmental methods. (Plowing, rational control, pruning using the Chablis method, etc.) The work of our wines is done in a traditional way, without malolactic fermentation or filtration. We currently produce around 32,000 bottles per year, of which production from the vine to the shipment is entirely managed by us.

The story of Champagne Marc is not only intimately linked to the history of France; it also mirrors its noble heart and spirit.
It begins in 1626, when Lord François de Baradat, the rich proprietor of a vineyard in Fleury-la-Rivière in Champagne and favourite courtier of King Louis XIII, is condemned to exile by Richelieu, for romantic liaisons and for provoking the Marquis de Seguier to a duel. Returning to his estate in Fleury-la-Rivière, which at the time was renowned for its red wine, François de Baradat had to wait until the death of Richelieu to find favor in the royal court again. When he eventually returned to court he bequeathed his estate to the ancestors of the Marc family. To pay tribute to this flamboyant benefactor, Champagne Marc, to this day, adorns each and every bottle of its champagne with the symbol of crossed swords upon a radiant sun: the sign of royalty.

The family tradition of producing exceptional Champagne was truly realized by Désiré’s grandson, Roger Constant Lemaire, who doubled the size of the estate and established the family home and headquarters in Villers-sous-Châtillon in 1945. Today, the legacy continues through his daughter Brigitte, her husband Gilles Tournant, and their sons Sébastien and Guillaume, who have embraced modern, ecologically friendly techniques to uphold the family’s commitment to quality and sustainability.
