Achillée is a family-driven project located in the heart of the Alsace wine route, initiated by Yves Dietrich in 1990. Starting with 4.5 hectares of vines, the estate has grown to 18.5 hectares of vines and 6 hectares of fruit trees. In 1999, the farm transitioned to organic agriculture and then to biodynamic in 2003. In 2016, Yves, along with his sons Jean and Pierre, established a bioclimatic winery built with larch wood and straw, embodying their commitment to sustainable winemaking.

The Lemaire family's journey into winemaking began in the late 19th century in Hautvilliers, the birthplace of Champagne. It was here that Désiré Lemaire, a gardener and poet, purchased the vineyards that would lay the foundation for what is now the Roger Constant Lemaire estate. The family tradition of producing exceptional Champagne was truly realized by Désiré’s grandson, Roger Constant Lemaire, who doubled the size of the estate and established the family home and headquarters in Villers-sous-Châtillon in 1945. Today, the legacy continues through his daughter Brigitte, her husband Gilles Tournant, and their sons Sébastien and Guillaume, who have embraced modern, ecologically friendly techniques to uphold the family’s commitment to quality and sustainability. From its modest 12 hectares, this family-run estate now exports its Champagne worldwide under the name Roger Constant Lemaire. The Lemaire family is deeply committed to ecological viticulture, using only natural marine algae to protect their vines. They meticulously select and harvest grapes by hand, and only the first press is used in production to ensure the highest quality. By avoiding malolactic fermentation, they preserve the Champagne's natural acidity, resulting in a product with inherent sweetness that requires only minimal cane sugar addition. This dedication to tradition and innovation makes Roger Constant Lemaire Champagne a true testament to the family's enduring passion for excellence.

The vineyard is predominantly planted with Pinot Meunier (50%), complemented by Chardonnay (40%) and Pinot Noir (10%). The story of Champagne Marc is not only intimately linked to the history of France; it also mirrors its noble heart and spirit. It begins in 1626, when Lord François de Baradat, the rich proprietor of a vineyard in Fleury-la-Rivière in Champagne and favourite courtier of King Louis XIII, is condemned to exile by Richelieu, for romantic liaisons and for provoking the Marquis de Seguier to a duel. Returning to his estate in Fleury-la-Rivière, which at the time was renowned for its red wine, François de Baradat had to wait until the death of Richelieu to find favor in the royal court again. When he eventually returned to court he bequeathed his estate to the ancestors of the Marc family. To pay tribute to this flamboyant benefactor, Champagne Marc, to this day, adorns each and every bottle of its champagne with the symbol of crossed swords upon a radiant sun: the sign of royalty.

All thesis champagnes are from our own production. Each quality depends on the blend of three grape varieties (Pinot Black, Meunier and Chardonnay) and storage time spent in our cellars. All-have a "raw" dosage except the semi-dry is sweeter.
