Domaine Julien Chopin in Monthelon has been crafting champagne for three generations. The estate was founded in 1947 by Julien Chopin, starting with just one hectare of vines. Over the years, the vineyard expanded under the leadership of his son Henri, who took over in 1969, focusing on developing the champagne range and welcoming visitors. Today, Emmanuel Chopin, the third generation, manages the family business, blending tradition with innovation. The estate specializes in both Champagne and Ratafia Champenois, and offers unique wine experiences with tasting workshops.

It was in 1896 that Eugene Billiot, a miller by profession in Ambonnay, invested in the vines when electricity arrived. He thus sees in the purchase of these lands the prosperity of his descendants. Grape productions are then sold to major Champagne brands before being partly kept for the first development of Cuvées in our name. Champagne BILLIOT has existed since 1937, the initial property belonging to Mr. Louis BILLIOT, who then separates it between his descendants, brothers and sisters of Henri Billiot. It was in 1960 that Champagne H. BILLIOT & Fils was born with Henri who invests and creates the cellars at 1 place de la Fontaine, putting access to the trade by placing us in the center of the village, then Mr. Billiot Serge who, to develop the reputation of our wines, will diversify the range and imagine our Special Cuvées. In 1992, we joined the Company with the creation of EARL H. Billiot, then SCEV in 2010, when Serge Billiot retired, it is now Laetitia Billiot, proud to be the 5th generation who is in charge of the management of the exploitation and the production and the elaboration of our wines after 17 years of family work. Ambonnay, one of the 5 premier grands crus in Champagne, is located in the heart of the Côte des Noirs, on the southern slopes of the Montagne de Reims. Its slopes are renowned for the richness of their Pinots Noirs and Chardonnay. Our operating area is 4ha 70 spread over eighteen plots all located in our village with ideal exposure since facing south, we are lucky to be, on all of our cuvées, Grand Cru but also pure Ambonnay, The grape variety of the vines is around 75% Pinot noir and 25% Chardonnay, All the work on our plots is done in a reasoned manner, always with a concern for quality and respect for ancestral environmental methods. (Plowing, rational control, pruning using the Chablis method, etc.) The work of our wines is done in a traditional way, without malolactic fermentation or filtration. We currently produce around 32,000 bottles per year, of which production from the vine to the shipment is entirely managed by us.

Champagne Michel Fagot is a proud family-owned estate located in the prestigious village of Rilly-la-Montagne, at the heart of the Montagne de Reims vineyards. Led by Olivier Fagot, the estate continues its long-standing tradition of producing refined and elegant Champagnes, inspired by integrated viticulture and biodynamic techniques. With 15 hectares of Premier Cru vines spread across four exceptional crus—Rilly-la-Montagne, Villers-Allerand, Trigny, and Hermonville—the estate cultivates the three main Champagne grape varieties: Chardonnay, Pinot Noir, and Pinot Meunier, along with the rare Pinot Blanc. As a family-run estate, we are proud to continue the tradition of producing high-quality Champagnes from our Premier Cru vineyards, which are planted with 87% Chardonnay and 13% Pinot Noir. Our passion for winemaking is deeply rooted in the land and its unique terroir, allowing us to create elegant Champagnes that reflect the essence of the region. Founded in 1952 by 16 visionary winegrowers, Champagne Sanger has become a distinguished house located in Avize. Spread over 13 hectares and 42 crus, the winery offers a unique journey through the Champagne region, with a special focus on Grand Cru Chardonnay and Pinot Noir. Deeply rooted in tradition, Sanger emphasizes respect for the raw materials and the environment. Their vintages are crafted with meticulous care, blending tradition and modernity, with reserve wines selected for their aging potential, showcasing elegance and character.

DOCK - Les Sacrés Chais, the first urban winery in Reims, was founded in 2021 by wine enthusiasts Laure and Fabrice, who set out to create still wines that merge tradition with modernity and a distinctive originality. The winery embodies a spirit of creativity, producing wines meant to be enjoyed among friends. Working with organic vineyards that prioritize the environment, Laure and Fabrice ensure that only the highest quality grapes are selected. The winemaking process is a balance of tradition and innovation, featuring a traditional wooden press alongside modern tanks. With minimal intervention, low sulfites, and manual bottling, DOCK - Les Sacrés Chais crafts wines that are authentic, carefully nurtured, and full of character.

The story of Champagne Marc is not only intimately linked to the history of France; it also mirrors its noble heart and spirit. It begins in 1626, when Lord François de Baradat, the rich proprietor of a vineyard in Fleury-la-Rivière in Champagne and favourite courtier of King Louis XIII, is condemned to exile by Richelieu, for romantic liaisons and for provoking the Marquis de Seguier to a duel. Returning to his estate in Fleury-la-Rivière, which at the time was renowned for its red wine, François de Baradat had to wait until the death of Richelieu to find favor in the royal court again. When he eventually returned to court he bequeathed his estate to the ancestors of the Marc family. To pay tribute to this flamboyant benefactor, Champagne Marc, to this day, adorns each and every bottle of its champagne with the symbol of crossed swords upon a radiant sun: the sign of royalty.    

All thesis champagnes are from our own production. Each quality depends on the blend of three grape varieties (Pinot Black, Meunier and Chardonnay) and storage time spent in our cellars. All-have a "raw" dosage except the semi-dry is sweeter.
