Corte Cavolo
About the Winery
Corte Cavolo is a small artisanal winery housed in Villa Grigolatti, a historic villa in Grezzana, in the Valpantena area. The organic vineyards lie on one of the best hills of the valley, at about 300 metres, on terraced slopes surrounded by woods. The estate covers just 2.5 hectares of historic vineyard, planted with Corvina, Corvinone and Rondinella, and all the main operations are carried out by hand.
The small cellar has been restored inside the historic buildings, and only the estate's own grapes are processed there. The approach is low intervention and great attention to detail: the winemaker intervenes only where necessary, accepts the differences between vintages and lets the wine develop slowly, to produce fine and elegant wines.
Visitors can taste the wines inside the villa, the heart of the estate. The suites, restored in 2024, also allow guests to stay overnight, with a swimming pool and breakfast in a large hall overlooking the valley.
About the Wines
All the wines are organic.
The Valpolicella Superiore is made from Corvina, Corvinone and Rondinella. It ferments spontaneously and ages 18 months in barriques. It is a fine and elegant wine and a clear expression of the terroir.
The Amarone della Valpolicella comes from dried Corvina, Corvinone and Rondinella grapes and ages 48 months in tonneaux. It is strong and vibrant, yet fine and very drinkable.
The sparkling rosé is made with Molinara and Corvinone and rests 24 months on the lees. It is an Extra Brut with high acidity and great freshness.
The white wine is a blend of Chardonnay, fermented in barrels, and Garganega, fermented in steel tanks. It is fresh but also rich and persistent.
The Recioto della Valpolicella is made from dried Corvina, Corvinone and Rondinella grapes and ages 24 months in small barrels. It is a sweet wine with high acidity and great elegance.
A Bordeaux-style blend is currently in the making.
