About Winery and Wines
Domaine du Chat Blanc is a family affair, lovingly run by Catherine, Stéphane, their son Paul, and Bonbon, the family cat. For years, they dreamed of owning a vineyard in Provence, and this vision became a reality nine years ago when they acquired an 18th-century farmhouse surrounded by a 5-hectare vineyard in AOP Ventoux. Located in Saint-Didier, within the picturesque Comtat Venaissin at the foot of Mont Ventoux, the vineyard is planted with Grenache and Syrah, organically cultivated for over 30 years.
The vineyard benefits from an exceptional microclimate, with abundant sunshine, a dry climate, and the protective Mistral wind, all contributing to the natural health of the vines.
The family dedicated three years to renovating the nearly ruined farmhouse, enlisting local artisans to restore its charm and soul. Simultaneously, they rejuvenated the vineyard, replanting half of the vines that had ceased to produce and carefully nurturing the remainder.
Domaine du Chat Blanc stands as a testament to their passion, hard work, and love for this beautiful corner of Provence.
At Domaine du Chat Blanc, harmony with nature and ecological responsibility are at the core of everything we do. Instead of relying on chemical treatments and weed killers, the vineyard is cultivated mechanically. Fertilization avoids chemicals, using organic amendments and natural green fertilizers to preserve the soil's natural balance.
Ensuring the cultivation of high-quality fruit as naturally as possible is a priority. Grapes are tasted regularly to ensure full maturity, and harvesting is done manually at dawn to prevent oxidation.
The winemaking process is equally gentle and organic, with a focus on minimizing inputs to create wines that reflect the authentic character of the terroir. The only exception is a minimal amount of sulfur — just 20% of the limit permitted in organic farming—to ensure the wine's hygiene and stability.
Visitors are invited to enjoy guided tours of the vineyard and wine tastings of the estate's organic wines, offered in both French and English, throughout the year.
