About Winery and Wines

PDC is first of all a name, that of its founder: Pietro De Conti. Mechanical engineer born in Cartizze, raised in Australia and returned to Italy by choice and for the love of his origins. 

Pietro’s story is that of a self-made winemaker who chooses to change direction at the age of thirty, applying engineering knowledge to viticulture to create a precision wine in total respect for the environment. 

Pietro’s training takes place in the field and in the cellar alone, drawing on knowledge from specialized consultants and targeted technical courses. Mistakes and time are the real school for Pietro who, however, almost immediately identifies PDC’s goal: to become an ambassador for his beloved Cartizze by founding a company on the concepts of sustainability and excellence.

The project started in 2012 with the specific intention of rejecting big productions and widely accessible prices, to encourage limited and niche production, where the only determining factor is true Italian excellence. 

The choice of implementing organic cultivation gives more prestige to the product, making it free of chemical residues and respecting environmental sustainability. Today the company can count on the support of specialized technicians in the vineyard and in the cellar and a young and dynamic team in welcoming customers.

PDC is the only winery specialized in the production of Valdobbiadene DOCG Prosecco Superiore di Cartizze and is located in Valdobbiadene, in the heart of the prestigious Cartizze territory.

The only grape variety we use is Glera, 100%. The annual production is very limited: 15 thousand bottles.

We produce 4 versions of sparkling wine: Cartizze Brut (5g/l), Cartizze Dry (20g/l), Cartizze Extra Brut BIO (2g/l), Cartizze Extra Dry BIO (13g/l).

The first fermentation takes place in concrete tanks, whereas the second fermentation takes place in an autoclave (Martinotti/Charmat method) and lasts from 2 up to 5 months.

Today PDC is the only organic certified winery in Cartizze: the cultivation of the vineyards and the winemaking process only follow sustainable and balanced practices.

In the vineyard, organic regulations only allow the use of natural products. In the cellar, organic vinification involves only the use of authorized oenological products and processes. Authorities ensure compliance with the Organic legislation through certifications and rigorous inspections throughout the whole year. Controls take place every year both in the vineyard and in the final product.

Organic farming is a sustainable solution for the environment, which allows the grower to operate in a healthy place, to restore natural ecosystems, ensuring a rich biodiversity of flora and fauna.

Extra Brut BIO and Extra Dry BIO are produced exclusively with selected grapes coming from our centenarian vines, that are harvested separately and then undergo a softer pressing, to ensure a more balanced and finer structure of the wine.
