PDC, named after its founder Pietro De Conti, embodies the journey of a self-made winemaker who blends engineering precision with a deep respect for tradition and the environment. Born in Cartizze and raised in Australia, Pietro returned to Italy, driven by a passion for his heritage. In 2012, he founded PDC with the vision of producing limited, high-quality wines that reflect the excellence of Cartizze. Emphasizing sustainability, PDC adopts organic cultivation methods, ensuring their wines are free from chemical residues.
Today, the winery thrives with a dedicated team of experts, committed to upholding Pietro's vision of excellence and environmental stewardship. Rejecting mass production, PDC focuses on crafting niche wines that stand as true ambassadors of Italian quality.
PDC is the only winery specializing in the production of Valdobbiadene DOCG Prosecco Superiore di Cartizze and is located in Valdobbiadene, in the heart of the prestigious Cartizze territory.
The only grape variety PDC uses is Glera. The annual production is very limited: 15 thousand bottles. The winery produces 4 versions of sparkling wine: Cartizze Brut (5g/l), Cartizze Dry (20g/l), Cartizze Extra Brut BIO (2g/l), Cartizze Extra Dry BIO (13g/l). The first fermentation takes place in concrete tanks, whereas the second fermentation takes place in an autoclave (Martinotti/Charmat method) and lasts from 2 up to 5 months.
Today PDC is the only organic certified winery in Cartizze: the cultivation of the vineyards and the winemaking process only follow sustainable and balanced practices. In the vineyard, organic regulations only allow the use of natural products. In the cellar, organic vinification involves only the use of authorized oenological products and processes. Authorities ensure compliance with the organic legislation through certifications and rigorous inspections throughout the whole year. Controls take place every year both in the vineyard and in the final product. Organic farming is a sustainable solution for the environment, which allows the grower to operate in a healthy place, to restore natural ecosystems, ensuring a rich biodiversity of flora and fauna.
Extra Brut BIO and Extra Dry BIO are produced exclusively with selected grapes coming from our centenarian vines, which are harvested separately and then undergo a softer pressing, to ensure a more balanced and finer structure of the wine.
