About Winery and Wines

Nestling in the heart of the Marne Valley, Taillet’s estate began selling its first bottles in 1961 and is now managed by Dylan et Léna TAILLET, the 5th generation, with the help of Eric, the 4th generation. The philosophy of working the vines with respect for the environment and in harmony with nature is more assertive than ever, with the first year of organic conversion in 2021. From now on, Dylan et Léna Taillet, creators of emotions in Champagne, have one priority: exceptional harvests for exceptional champagne. Two perfectionists who want to preserve in each of their champagnes a typicity and a style that can be recognised from the first sip.

The relationship between the soil and the cuvée, the main thrust of my philosophy today. Trying to convey the energy of the soil to the consumer through the bubbles. My passion for the soil has led me to make fundamental changes to my vine-growing methods (pruning system, vine height, soil cultivation methods, vine forestry, planting young trees taken from the estate...). Meunier, the king grape variety of the Belval Valley. My life, my passion, my reason for being a winemaker. It is the emblematic grape variety of the Taillet estate, planted exclusively in very old vines on living clay soils and subsoils of limestone, flint, marl, and clay.

Even more advanced vinification for all our cuvées: ageing is the keystone of our Meunier philosophy. Thanks to our living soils and our terroirs that have been under control for several decades, we can extend the ageing period and offer even more complex cuvées.

We use our new pneumatic Diemme presses with a capacity of 4,000 kg, acquired in 2024 and 2025. Partial vinification in barrels: We use oak barrels (400, 500, and 600L) and stainless steel vats between 10 HL and 50 HL, to give priority to the diversity of parcels and reserve wines.
