Palmento Costanzo is located in Contrada Santo Spirito, in Passopisciaro village, on the northern side of Mount Etna. For centuries grapes of Nerello Mascalese, Nerello Cappuccio, Carricante and Catarratto have been cultivated here. Today we farm following the principles of organic farming and all the labor is done manually. Over one hundred terraces - a long series of dry stone walls - rising from 600 to 800 metres host our old vines which are bush-trained in the typical chestnut pole. This unique land surrounds the ancient winery that has been brought back to life in a meticulous and sensitive restructuration project based on the principles of bioarchitecture. This is our home, where our Etna DOC wines are born: an authentic expression of the largest active volcano in Europe.

Bonfiglio Winery, officially established in 1986, has deep roots that date back to the early 1900s when the Bonfiglio family began cultivating the lands of Briga. Originally focused on producing lemons, oranges, and olive oil, the family later transitioned to viticulture. In the early 2000s, the citrus groves were uprooted, the land was re-prepared, and vineyards were planted. The family also expanded by adding the property in Piano Cuturi (Giampilieri). In 2015, the commercial name "Cantine Bonfiglio" was introduced, marking a new chapter in the winery’s journey, focusing on producing high-quality wines while staying true to their agricultural heritage.

The family decides to focus on the production of high quality wines with a great accent on sustainability. But what does sustainability means? Here it means that production has been anticipated by a careful analysis of the vocations of each parcel. Most of the work is concentrated in the vineyard, according to Etna's peasant tradition, in order to allow the activity to have a minimal impact both on the environment and on consumers' health.

I Custodi are the keepers, the guardians of Mt. Etna’s vineyards: to guard means to preserve the land, to maintain the traditions and to respect the people. From these values and from the love for a beautiful land, where the vine was brought by man more than two millennia ago, spring the wines of I Custodi, the result of the generosity and the minerality of the warm volcanic soil, the cold of the Muntagna and the sun of Sicily. Healthy vines of all ages, growing densely on ancient dry stone terraces, supported by their stake in chestnut wood, are cultivated in harmony with the environment that surrounds them only by manual labor of I Vigneri, skilfull Etnean winegrowers. Winegrowing as it has always been on Mt. Etna for centuries, without synthetic chemicals, in respect of the people, the landscape and the nature.

We are situated on the North slope of Mount Etna at Passopisciaro, an area where viticulture goes back several thousand years. Our vineyards are to be found at an altitude of between 600 and 1,000 metres above sea level in Contrada Arcurìa, in Contrada Feudo di Mezzo, in Contrada Muganazzi, in Contrada Santo Spirito and in Contrada Barbabecchi. Planting density ranges between 6,000 and 10,000 vines per hectare. Some of the vines are on their own roots, that is to say are ungrafted.
