The Cipriana COMMERCIAL FARM has a long history in the Bolgheri area (it is the third such farm to have been established there and the first bottle of San Martino was produced in 1978). It lies on the slopes of the mediaeval town of Castgneto Carducci and is the property of the Fabiani brothers who have been vine growers since 1975.
The concern owns some 8 hectares of vineyard and 3 of olive trees. A part of the vineyards is near the main buildings of the farm and part on the via Bolgherese where the most famous internationally known vine growers can be found. The average age of the vineyards is 10 years with between 5000 and 6000 stems per hectare. The vines are Guyot-trained spurred cordon plants. The olive groves, also partly near the main buildings and partly near Venturina, contain trees that are 'vase' pruned in the traditional Tuscan shape and include century old trees.

If you bear with me, with a little help from agriculture expert Mauro Carrara I’ll tell you the story of my vineyard as clearly as I can.
Way back at the start of the project – my creation – the primary objective was clear: to make whatever decisions, carry out whatever research and employ whatever solutions and innovative techniques were necessary to reach the highest possible level of quality. And so, over the years, we have brought “operation quality” to fruition, working with countless experts and professionals from the sector, focusing first on the vineyard, then on the winery, and finally on the products themselves.

The surface of the land is about 49 acres (20 Ha), of which 15 are devoted to the production of cereals, like wheat and barley. A 5 acre fruit garden produces peaches and plums. Another 5 acres are covered with 1500 olive trees, some of them older than a century, some other planted more recently.
Three quarters of an acre are covered with nonheated green houses for the production of strawberries, tomatoes, lettuce and zucchini. The rest of the land, approximately 7,5 cres is planted with vines, some of them in production and some planted in 1999.
The average output of extra virgin olive oil is 4 to 5 tons per year. The olives are processed in a nearby traditional stone mill, owned by the Serni family for many years and at present run by Attilio, one of the brothers.
The wine production consists of different types: from the DOC of Bolgheri to the IGT (Typical Geografic Indication) of Tuscany, for a total of 6 tons of whites and 3 tons of reds. Yield will increase from 2003-2004 when the young vines will start production.

Podere Sapaio is located in the Bolgheri wine zone of the Maremma, a territory that runs parallel to the Tuscan coast in the province of Livorno and which is named after the town of Bolgheri.

The owner of Podere Sapaio, Massimo Piccin, purchased the estate in 1999 and planted his vineyards one year later in 2000. The estate produces just two wines: Sapaio, a Bolgheri DOC Superiore made of cabernet sauvignon, cabernet franc, and petit verdot; and Volpolo, a Bolgheri DOC made from cabernet sauvignon, merlot, and petit verdot. Their first vintage in 2004 was already described as “excellent, a prelude of things to come,” an admirable accomplishment for such young vines. Though relatively new on the Bolgheri wine scene, Massimo and his consulting enologist Carlo Ferrini quickly cultivated a devoted following with their wines, which, in true Bolgheri fashion, show a great ability to age for a decade or more. One of the fundamental points of the Sapaio philosophy is respect for the land and a sustainable approach that effectively combines technology and tradition.
