In 2009, alongside my cousin Denis Cunial, we founded the Cà Bonetto winery with the vision to modernize and expand upon the legacy started by our predecessors, Valerio and Mario Cunial. The foundation of Cà Bonetto marks the continuation of a rich family tradition of winemaking, and we officially inaugurated our new winery on June 13, 2010, with a grand celebration attended by customers, civil and religious authorities, and the community. Our state-of-the-art winery, carefully designed by expert technicians in the field, is both functional and visually appealing, ensuring that visitors experience not only the best of our wines but also the beauty of our facility. enuta de’Stefenelli produces excellent wines by using grapes only from its own vineyards and by following a natural and integrated transformation process:"from the grape ... to the bottle". Excellent "Romagna DOC" white and red wines, as well as an intriguing rosé from Sangiovese grapes, are secured by the quality of the Territory, the hills around “Bertinoro” are one of the best wine sub-zones of Romagna, by the careful and experienced vineyard and winery practices, by the technologies applied ... The careful winemaking process begins with a grape bunch selection at perfect ripeness, a hand harvest in small crates and a controlled drop in temperature: all of that, to ensure grapes arrival to the winery in ideal conditions. In the winery, we have the most advanced technologies to ensure the best wine quality and aging potential: production and storage areas as well as tanks are fully temperature controlled, grapes are gently handled by means of advanced machinery and equipment, must and wine are processed under inert gas. In our wine cellar, the selected red wines undergo a lengthy aging process in French oak, Bordeaux-style, barriques. The production is followed directly, with an artisan touch, by Sergio Stefenelli, estate owner and wine designer, with the competent supervision of the enologist Dr. Attilio Pagli.
