Acetaia Sereni, with its roots in the early twentieth century, began producing balsamic vinegar under the care of Santina, who joined the Sereni family through marriage. As a housewife, she would prepare traditional Modena meals for her large family, often using balsamic vinegar as a key condiment. To meet her family's needs, Santina produced a few liters of balsamic vinegar each year, a tradition that has since grown into a renowned family business. Today, Acetaia Sereni is managed by Pier Luigi Sereni, his wife Elisabetta, and their sons Umberto and Francesco. The family now oversees more than 1,500 casks of balsamic vinegar, aged in prized wooden barrels, and exports their exceptional product worldwide. In addition to their balsamic vinegar, the estate is home to over 1,000 olive trees, from which they produce a delicate and fruity extra-virgin olive oil, once again establishing it as a typical product of Modena. In 2012, the Sereni family expanded their operations by adding a farm holiday center, Agriturismo Acetaia Sereni, located atop a picturesque hill. Here, guests can enjoy traditional Modena dishes, all enhanced with the estate's balsamic vinegar and olive oil, alongside local wines and produce from the estate's vegetable garden. The agriturismo also offers six comfortable rooms, providing a serene and relaxing stay amidst the beautiful Modena countryside.

Born from the love of the land and its fruits, in accordance with the environment, our cellar Terraquilia is set in Guiglia, a village located in a pristine and natural landscape. The owner, Romano Mattioli, thought and realized his winery for all those who appreciate wine as an expression of a production philosophy rooted in the past. At about 450 m above sea level, the vineyards and the cellar are handled in full compliance with traditions, according to the seasons and to the slow natural rhythms, creating the right balance between vine and wine. Our products interpret the tradition of these lands, inherited by the first winemakers, our ancestors. Without the support of modern technology, they knew how to exploit the seasonal trend to control the fermentation process. Our constant effort is aimed to limit as many as possible any alterations: first of all in our grapes, both during the harvest (by hand and in small cases) and during crushing (soft crushing), and of course, in every vinification phase in the cellar (for example, the gravity bottling without the use of pumps). As producers of natural wines, we are firmly convinced that it is possible to win this challenge: to give wine lovers a product, which is able to guarantee quality for the right period of time, preserving all flavors and aromas.

Fattoria Moretto is currently run by Fausto and Fabio, the third generation of the Altariva family. The winery's origins trace back to the early 1960s when their grandfather, Antonio Altariva, moved the family from Pavullo nel Frignano to the hills of Castelvetro to start a winemaking venture under a sharecropping contract. Initially, Antonio traded Grasparossa grapes and Lambrusco in carboys. In 1971, his son Domenico, along with his wife Albertina, purchased 2.5 hectares of land, planting the family's first vineyard and establishing a cellar on the adjacent property. Domenico's passion for viticulture and the production of Lambrusco Grasparossa grew over time, a passion he passed down to his sons, Fabio and Fausto, from a young age. In 1991, the brothers, now in their twenties, decided to elevate the winery's quality by transitioning from selling bulk wine to producing and selling bottled Lambrusco di Grasparossa DOC. With the support of their parents, they built a larger cellar and formally established Fattoria Moretto, launching their first labeled bottles. Initially, all the wines were naturally fermented in the bottle. Over time, more Grasparossa vineyards were added on the Castelvetro hills, with the vineyards being cultivated using the spurred cordon and Guyot systems. These vineyards benefit from excellent ventilation, which tempers the summer heat and protects the plants from diseases. In 1995, Fausto decided to convert vineyard cultivation to the "integrated production" method, marking the first step towards organic farming. By the late 1990s, the winery adopted the "Martinotti" or "Charmat" method, in a continuous quest for cleaner and more elegant products. The older vineyards have now become central to the production of the family's flagship "cru" wines. Today, Fattoria Moretto's production is focused on expressing the unique characteristics of the Lambrusco Grasparossa territory, emphasizing quality over quantity.

We are a very young winery, the first vineyards were planted in 2016, and since day zero we have adopted a completely organic and eco-sustainable agriculture and production, to offer healthy and quality products. Ventiventi is located right in the center of 63 hectares, of which 30 are planted as vineyards. The estate cultivates native grapes such as Lambrusco Salamino di Santa Croce, Sorbara, Ancellotta, and Pignoletto and international grapes such as Chardonnay, Pinot Bianco, Cabernet Sauvignon, and their wines are 100% produced with from grapes sourced from their vineyards. Ventiventi is very young, born in the year whose name it bears, it also boasts a very young and creative team, who wants to get involved, experiment, and offer fresh, young, and versatile products, all in full respect of local tradition!

Everything started from the purchase of a stable in the 50s, which was later converted into the vinegar loft. Passion, perseverance, and dedication are just some of the values that Opera 02 CEO Mattia Montanari, has inherited from his family and has been able to actualize in this start-up day after day. Actually, it is with great courage that he has launched this project, which keeps on growing day after day. Opera02: on one side the organic cultivated area and on the other side the accommodating building, characterized by various renewable energy systems, two restaurants, and 8 rooms. Our leading points are the respect for nature and tradition, and therefore the choice of embracing Organic Agriculture. The attention to the ancient gestures teaches us to deeply appreciate our land and our local products, Lambrusco and Vinegar.

Cantina del Frignano is a small organic winery producing high-quality wines in the territory of Frignano Basso, in the province of Modena. Its history began in 1993 with a first experimental vineyard from the Emilia Romagna region, and later in 2000 and 2001 other vineyards were planted. Today the winery covers an area of just over 5 hectares, all planted with vines, and their annual production is around 22,000 bottles. Cantina del Frignano's vineyards are located from 450 to 550 meters above sea level. The temperature ranges enhance the peculiarities of the area. The soils are composed of good parts of clay, silt, and sand, in balanced quantities, chalky, particularly suitable for sparkling wine grapes, classic method, and in other parts in clay soils suitable for red grapes. The vines per hectare are about 4,000. Harvesting is done exclusively by hand.

In our family, which has always been steeped in the rural tradition of growing Lambrusco, this agricultural heritage is something we are committed to conveying in our wines. We proudly own and manage eight vineyards, spread across five municipalities and two provinces. This diversity allows us to cultivate six different grape varieties, selected according to the most suitable terroirs. Brothers Giuseppe and Roberto, raised among the vines by their grandfather Augusto, oversee all agronomic aspects of the business, following the protocol of integrated production, a low environmental impact farming system. We began the organic conversion process in 2021, emphasizing sustainability and natural agricultural practices.
