Provides 2 wine tastings and winery visit from €20.00
Castel di Salve is proudly one of the historical wine producers in Puglia, having been founded in 1885 by Antonio Winspeare, Duke of Salve, to produce fine table wines and aged bottled wines from the grapes farmed in the estates of Salve, Supersano and Depressa. At its founding, the winery was the first to age and bottle its wines in Salento, under the guidance of Bordeaux winemaker Simon Murat. Its wines commended awards in competitions and expos in London (1888), Chicago (1894), Asti (1898), Paris and Naples (1900). To this day, Castel di Salve has been working on the same land striving to express it into wines of character and elegance. The estate follows all of the production processes in the winery built by their ancestors in 1879: from the destemming of the grapes, the different fermentations, the refining and aging in oak barrels in the underground cellars excavated from limestone. During the last 3 decades, we have modernized the building with respect for the past architecture, to fully control the hygiene of the environment where our wines evolve. To Castel di Salve, cleanliness and controlled temperatures are key to obtaining stable wines without invasive methods. Stainless steel and concrete tanks are temperature-controlled through a system powered by solar panels covering around 92% of our winery’s energy consumption for over 10 years.

At the base of the winemaking activity: a constellation of small plots of land specifically chosen for each type of winemaking, personally cared for by Guglielmo Zito himself, in synergy with the technical consultancy of Simone Santoro and through constant reference to the traditional wisdom preserved by the vine growers present in the Itria Valley.

Conti Zecca has inhabited the lands of Leverano, in the heart of Salento, for five centuries. Conti Zecca has always taken great efforts to listen to, understand and make good use of the land until finally, in the early 1900s, the production cycle from cultivation to vinification of the grapes from the estate was accomplished, without ever changing the subtle balance of the place. The transition from the vine to the cellar was a natural progression, one which the company still follows with the same dedication today. Over time, the identity of the people and the place has overlapped, binding memory and nature together. A harmonious co-existence brought about by passion and respect, guarded peacefully and discreetly by those involved in the diligent work of Conti Zecca. This spirit permeates everything that is born of Leverano, particularly Conti Zecca wines, which alone tell a story of quality founded on the native grape varieties of Negroamaro, Primitivo, Malvasia Nera and Bianca, as well as select non-native varieties that are well adapted to the territory of Salento. The family’s four estates, Cantalupi, Donna Marzia, Saraceno, Santo Stefano (covering a total of 320 hectares), are facets of this unique picture and give life to harmonious wines enjoyed by many.

The modern facility, situated in the Roselle district of Maruggio, lies just 5 km from the Ionian Sea and sits in the heart of the Primitivo di Manduria DOP. The estate takes its name from the region’s distinctive trulli saraceni, scattered across the landscape. In Puglia, the term masseria refers to the central rural building where agricultural products are processed and stored. Designed to harmonize with the surrounding environment, the winery was built beside a carefully restored historic masseria. The contrast between state-of-the-art winemaking technology and the traditional tufo stone structure, once used as an animal shelter, highlights the fusion of innovation and heritage. The arched and star-vaulted ceilings reflect the region’s architectural identity, creating a space where the work in the vineyards and cellar seamlessly connects with the pleasure of tasting fine wines.
